Short-wave lamps are too aggressive—they scorch the crust before the inside even knows it’s in an oven. Long-wave heaters are too slow, relying on air movement that just doesn’t cut it. Medium-wave radiation actually sinks into the dough. It balances out that perfect golden-brown crust with a fully cooked center. The trick is in the penetration. If you’re running a fast line, you can’t afford to be timid. You’ll need more wattage per centimeter to make sure the core temperature hits the mark before the loaf slides out the other end.
