You go from zero to searing temperatures in seconds, not minutes. Why it actually works Here is the secret: the wavelength of MWIR is a perfect match for water and fats. Since most food is made of those two things, the heat doesn’t just bounce off the surface—it actually sinks in. If you’re pushing a high volume of plates, this is how you tighten up your rhythm. You get that perfect brown or sear way quicker, which means more plates leaving the kitchen every hour. Getting it into your kitchen We use quartz envelopes for the lamps because they can handle the heat without cracking. We also make sure they fit into the footprints of the ovens you already have, so you aren’t ripping out your entire line. Plus, you can hook them up to PID controllers. It’s a fancy way of saying you get total control over the temp zones. No more “guessing” if the oven is too hot, and way fewer burnt edges ending up in the trash. The catch (because there’s always one) Now, this isn’t a magic wand. Because the heat is so intense, you have to be precise. If the lamps are too close to the food, you’ll torch the top while the middle is still cold.
