
Getting Your Bakery Ovens Just Right with IR Heating
When you’re running an automated bakery line, timing is everything. One minute too long and you’ve got burnt edges; a few degrees too low and your crust is a disappointment. You can’t afford to wait for a massive oven cavity to heat up before the product even hits the belt. That’s why we use short-wave infrared (IR) emitters. Instead of heating the air, they shoot heat directly into the product. It’s fast. Really fast.
The Secret to Steady Temps
Now, you can’t just plug these lamps in and hope for the best. To actually nail your temperature, we pair our IR lamps with PID controllers and Solid State Relays (SSRs). Here is the trick: the SSR allows for something called pulse-width modulation. In plain English? The lamp flickers on and off in milliseconds. It’s so fast you won’t see it, but it keeps your temperature within ±1°C. Whatever you do, avoid mechanical relays. The constant click-click-click will chew through the contacts in a matter of weeks. Not a great way to spend your weekend.
Picking Your Hardware
We don’t believe in one-size-fits-all. We tweak the wattage and voltage based on how much space you’re working with. A higher wattage lamp gives you more heat density, which means your bread spends less time in the oven. But there’s a catch. High-wattage tubes get incredibly hot. If you don’t spec out your cooling fans correctly, you’re going to end up with melted wiring harnesses. We use quartz glass for the tubes because it handles the heat and lets the IR energy through without blocking it.
Installation (and the “Fingerprint” Problem)
We make these as easy to install as possible. Whether you need a specific solder-in lead or just a simple plug-and-play connector, we build it exactly to your drawings. It should just drop right in. But here is a pro tip:be careful with the glass. Quartz is temperamental. A single fingerprint or a smudge of grease can create a “hot spot.” Once that happens, the tube will burn out way sooner than it should. Wear lint-free gloves when you’re installing them. And if your bakery is a cloud of flour dust, you’ll probably want a protective shield. It does cut the efficiency a tiny bit, but it’s a lot better than replacing lamps every other month.
