How the heat actually works
Commercial ovens need a ton of power to bounce back quickly after you slide in a new batch of dough. We use short-wave infrared tech because it doesn’t just sit on the surface; it punches right into the dough. Here is the trick: we match the wattage and voltage to your current setup. This means you don’t have to mess around with the control board or rewire anything. Just a heads-up though—if you decide to go with a higher wattage tube to speed up your bakes, double-check your wiring and contactors. If they can’t handle the extra current, you’ll be swapping out blown fuses more often than you’d like.
No more hot spots
We use high-purity quartz glass because commercial baking is brutal on equipment. The constant heating and cooling would crack cheaper glass in no time. We also obsess over where the filament sits. If it’s even slightly off-center, you get hot spots. And nobody wants a loaf that’s perfectly baked on one side and scorched on the other. Plus, the connectors are snug. The easy part (and the one chore)
