
Stop Waiting on Your Oven to Catch Up
If you’ve spent any time in a high-volume bakery, you know that annoying lag. You know the one—where the thermostat says it’s hot, but your dough is just sitting there, waiting for the heat to actually move through the air. In a busy kitchen, that delay is a killer. It slows everything down. That’s why we moved away from standard heating and started using short-wave infrared (IR) halogen tech.
How it actually works
Here’s the thing: most ovens try to heat the air first. IR doesn’t bother with that. It goes straight for the product. We use a tungsten filament tucked inside high-purity quartz, which creates what we call a “second-response” effect. In plain English? The element hits its peak temperature almost instantly. It gives you a kind of control you just can’t get with old-school elements. Need a quick, aggressive sear on the crust? Crank it up. Want to stop just before things start to burn? Drop it. It happens in real-time.
Getting the hardware right
When you’re looking for a replacement, keep an eye on the wattage-to-length ratio. That’s what determines your heat density. If you need that intense, rapid browning, you want high-wattage tubes in a small footprint. And don’t worry about a massive electrical overhaul. We use standard R7s or SK15 connectors, so these are basically drop-in replacements. You can swap them out without having to rewire your entire control board. The quartz shell is the real hero here. It keeps the filament from oxidizing while letting the IR radiation fly right through. If your specific dough needs deep heat rather than just a surface sear, we’ve got coated versions that shift the wavelength to get deeper into the bread.
A few things to keep in mind
Now, this kind of speed comes with a trade-off. These elements put out a lot of intense, localized heat. If your ventilation isn’t up to the task, you might find your housing overheating or your sensors acting up. You’ll also want to make sure your PID controllers are tuned for this kind of ramp-up speed. If they’re set for a slower oven, you’ll likely see the temperature overshoot the mark. But once you get it dialed in? You can tighten up your production beat and get your bake cycles done a whole lot faster.
