
Keeping Your Griddle Temp Steady (Even When the Shop is Freezing)
If you’ve ever run a commercial griddle, you know the struggle. You set your temp, everything looks great, and then someone opens the bay door or a cold draft hits the line. Suddenly, your surface temp dips, and your bake goes from perfect to “not quite right.” It’s frustrating. We fixed this by using closed-loop infrared (IR) control to handle the temperature swings in real-time.
Why standard thermostats usually fail
Here is the problem: most thermostats are too slow. They wait for the heat to drop, notice it a few seconds later, and then kick back in. By then, your griddle has already cooled down. You end up with this “sawtooth” temperature pattern—up, down, up, down. Our IR systems don’t play that game. We use non-contact sensors that watch the surface of the baking area constantly. The moment the temp dips—even by a tiny fraction—the controller pushes more power to the lamps. It happens in milliseconds. The result? A flat, steady heat that doesn’t budge.
The gear under the hood
We use short-wave infrared lamps here. Why? Because short-wave radiation hits the food faster than the long-wave stuff. But you can’t just blast these lamps on and off, or you’ll burn them out. To stop that, we pair them with PID controllers. Think of the PID as the “brain” that calculates exactly how much power is needed to hit the target temp without overshooting it and scorching everything. One heads-up: make sure your power supply can handle the bursts. When these lamps kick into high gear to compensate for a cold draft, they pull a lot of current. If your breakers are undersized, they’ll trip.
The one catch
Precision isn’t free. Since the IR sensors need a clear line of sight to the griddle to work, they’re sensitive. If grease or carbon build-up coats the lens, the sensor gets “blind” and the readings drift. If that happens, the system thinks the griddle is colder than it actually is and will keep pumping in heat until your product is burnt. The fix is simple: build in a spot where the operator can easily wipe the lens every day. A quick swipe with a cloth keeps the whole system honest.
